Kaffir lime leaves, or makrut, has an unforgettable, potent taste and aroma: like lime, bright, citrusy. The Southeast Asian version of bay leaves, many dishes in Thai and Vietnamise recipes call for kaffir lime leaves: such as green curry, tom kha Soup. Kaffir lime leaves are too tough to eat, it is often just used to flavor curries, stews and soups and often disregarded before eating the dish.
